A prototype coffee designed to enhance in taste and aroma as time passes. This experimental project was developed in collaboration with COFFEE BAR GALLAGE in Higashi-Nakano.

Turning Time to Flavor Enriching from Flavor Fading
The goal was to enjoy specialty iced coffee over a week in offices and other spaces. However, traditional brewing methods caused flavor to deteriorate over time, making long-term storage a challenge.

Creation
Redefining Coffee Through Super Slow Brewing
The TIME reimagines coffee extraction by introducing Super Slow Brewing, a method developed by GALLAGE.
Unlike traditional brewing, this process includes “secondary in-bottle extraction”, keeping the coffee in a continuous brewing state until the moment it's enjoyed. This approach prevents flavor deterioration, ensuring the coffee stays fresh while deepening in complexity over time.
As the coffee evolves, it unlocks new layers of aroma and taste, enhancing the distinct character of each bean. To maximize this effect, seasonally selected beans are carefully curated to complement the Super Slow Brewing experience.
